Dairy-Free Cashew Sour Cream

INGREDIENT:

Savoury version:

3/4 cup cashew nuts

1/2 cup water

2 tbsp lemon juice

1/2 tsp salt

1/2 tsp garlic powder


Sweet version:

3/4 cup cashew nuts

1/2 cup water

2 tbsp lemon juice

1/2 tsp sugar or a couple of dates


METHOD:

This is so simple! Put all ingredients into a small blender (like a smoothies blender) and blend until you get a smooth paste. Depending on the blender you might have to add a bit more water to get a smooth cream. Also if your blender isn't very powerful Phillip would recommend soaking the cashews overnight (use a bit less water when blending that instance). For the sweet version you could even add some cinnamon or vanilla and serve with a cake.
